Creamy parmesan risotto
Risotto, with its creamy texture and comforting flavor, is a classic choice for any special occasion.
Ingredients:
2 cups risotto rice
4 cups of vegetable stock
1 chopped onion
2 chopped garlic cloves
1 cup dry white wine
1/2 cup grated Parmesan cheese
2 tablespoons butter
Salt and pepper to taste
Chopped fresh chives for garnish
Preparation:
In a large saucepan, heat the vegetable stock over a low heat and, in another saucepan, sauté the onion and garlic in the butter until soft.
Add the rice and stir for about 2 minutes, until the grains are lightly browned.
Add the white wine to the pan and stir until the liquid is absorbed.
Add a ladle of vegetable stock to the rice pan and stir constantly until the liquid is absorbed. Continue adding the stock, one ladle at a time, stirring constantly, until the rice is cooked al dente.
Remove the pan from the heat and add the grated Parmesan cheese, stirring until the cheese has melted and the risotto is creamy.
Season with salt and pepper to taste and serve immediately, garnished with chopped fresh chives.
Cheesecake with strawberry jam
End your meal on a high note with this strawberry cheesecake, an indulgent dessert that perfectly combines the mild flavour of mascarpone cheese with the sweetness of strawberry jam.
Ingredients:
200g of crushed digestive biscuits
100g melted butter
500g mascarpone cheese
1 tin of condensed milk
Juice of 1 lemon
1 teaspoon vanilla essence
Strawberry jam to taste
Preparation:
Mix the crushed biscuits with the melted butter in a bowl until they form a smooth dough.
Line the bottom of a removable mold with the biscuit dough and set aside in the fridge.
Beat the mascarpone cheese in a mixer until creamy. Add the condensed milk, lemon juice and vanilla essence and continue to beat until smooth.
Pour the cream over the biscuit base in the mold and refrigerate for at least 4 hours, or until firm.
Before serving, drizzle with the strawberry jam.
Serve chilled and enjoy this irresistible dessert!
