XPTO Wines


XPTO wines are produced in the Western Cape region of the Republic of South Africa from a selection of the finest grapes. The climatic diversity of the region, between the mountains and the sea, combined with the quality of its soils and methods of cultivation and production contribute to wines with unique characteristics and above average quality. XPTO wines, as the name implies, are excellent wines and ideal for accompanying your daily meals and special events. Intense ruby color, aroma of great harmony and complex nuances of herbs and spices. Voluptuous wine with smooth and well integrated acidity and soft tannins.

WINEMAKING

Grapes are meticulously hand-picked and cold-soaked for at least 12 hrs. After having been crushed and pressed, fermentation comes into play. Must (or juice) begins fermenting naturally and continues until all the sugar is converted into alcohol. Once fermentation is complete, clarification begins and solids such as dead yeast cells, tannins, and proteins are removed. Wine is then transferred into a different vessel and
prepared for bottling or future ageing which is the final stage of the wine making process.

WINEMAKING

Grapes are grown and fermented the same as with any other wine. After fermentation, the wines are aged for about five months. The wine is bottled with extra yeast and sugar and the bottles are capped to allow for a second round of fermentation, which can last for about a year after which it is aged for one or more years after the second fermentation. The yeast is removed through riddling, whereby the bottle is placed upside-down and rotated one-eighth of a turn every day. The dead yeast cells settle into the neck of the bottle. The neck of the bottle is frozen in an ice/salt water bath and the cork is removed. The pressure forces the frozen plug of dead yeast cells out of the bottle. This process is called disgorging. Sometimes a mixture of white-wine brandy and sugar (dosage) is added to top off the bottle. The bottle is corked and wired to
secure the high pressure inside.

Bag in box wines / boxed wines(Bib Wines)

Wine distribution occurs in boxed form due to logistical reasons. Once opened, any wine, whether bottled or bag in box (boxed wine), begins to oxidize and so deterioration may begin, the (“shelf-life of which” / “duration of which”) will depend on the composition of the wine. Boxed wine is also better value for money with a classic 5 litre boxed wine being equal to more than five bottles. There are also BIB of 3 litre and tetra packs of 1 litre.

For peace of mind and great contribution to the environment, boxed wine is kinder to the environment. Boxed wine has a lot of going for it. ONI is wine distributor of its own brand and many others.
